
Husband: “It smells like a freaking farmer’s market in here.” Ummm huh? Thoughts start running through my head….why a “freaking” farmer’s market? I like the smell of a farmer’s market. I’m cutting vegetables…what’s it supposed to smell like? Pizza?
Ok…granted I have sage essential oil in the diffuser and I DID just spray the counters down with Radish scented cleaner (it’s my favorite thing ever!!!) and washed my hands with basil scented soap (also a favorite!!!)…while I chop peppers…
So I guess, maybe farmer’s market is a fair smell.
Me: “ummm, Sorry?”
Husband: “Sorry? No…I like it, it’s just very vegetable-y in here”. Vegetable-y? I guess that’s the technical word for today. Add it to the vocabulary kids:)



- 1 rotisserie chicken pulled from bone
- 1 sweet onion
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1 polano pepper
- 4 roma tomatoes
- 1 Tbsp Pepper
- 1/2 Tbsp Garlic Powder
- 1/2 Tbsp Onion Powder
- 1/4 Tbsp Chili Powder
- 1/4 Tbsp Crushed Red Pepper
- 1 Tbsp Lime Juice
- 2 Tbsp Avocado Oil
- small flour tortillas
- 1 large Avocado
- Warm avocado oil in large pan. Slice peppers and onions into strips. Add peppers and onions to pan. Add dry seasonings. Cook for 5 mins. Slice tomatoes into rounds. Add chicken, tomatoes and lime juice. Cooke for 15 mins stirring occasionally. Slice avocado. Place taco mixture into tortillas and top with avocado. Serves 4.
